Mozzarella with Mixed Grilled Vegetables

Ingredients

  • 1 ball large mozzarella
  • 1 red pepper
  • 1 yellow pepper
  • 1 medium courgette
  • 1 medium aubergine
  • 1 medium red onion
  • 1 T fresh thyme chopped
  • 75mls olive oil, may need a little more
  • 1 clove garlic
  • 2 handfuls basil leaves
  • 8 slices panchetta
  • Salt and crushed black pepper

Method

  1. Crush garlic and mix with chopped thyme leaves, black pepper and 25ml olive oil.
  2. Slice vegetables and pour over olive oil mix. Toss to coat. Leave to marinade for about 2 hours.
  3. Grill panchetta till crispy.
  4. On a griddle plate cook vegetables.
  5. Slice mozzarella.
  6. Make vegetable towers alternating vegetables and mozzarella.
  7. Place two pieces of panchetta on the top with a final slice of mozzarella.
  8. Heat through in a moderate oven till cheese just starts to melt.
  9. While heating make basil dressing to garnish. Put leaves in blender and pour over remainder of oil. Add a little salt and blend for 20 secs.
  10. Serve on a bed of rocket with basil dressing poured over the top.
