Mozzarella with Mixed Grilled Vegetables

Ingredients
- 1 ball large mozzarella
- 1 red pepper
- 1 yellow pepper
- 1 medium courgette
- 1 medium aubergine
- 1 medium red onion
- 1 T fresh thyme chopped
- 75mls olive oil, may need a little more
- 1 clove garlic
- 2 handfuls basil leaves
- 8 slices panchetta
- Salt and crushed black pepper
Method
- Crush garlic and mix with chopped thyme leaves, black pepper and 25ml olive oil.
- Slice vegetables and pour over olive oil mix. Toss to coat. Leave to marinade for about 2 hours.
- Grill panchetta till crispy.
- On a griddle plate cook vegetables.
- Slice mozzarella.
- Make vegetable towers alternating vegetables and mozzarella.
- Place two pieces of panchetta on the top with a final slice of mozzarella.
- Heat through in a moderate oven till cheese just starts to melt.
- While heating make basil dressing to garnish. Put leaves in blender and pour over remainder of oil. Add a little salt and blend for 20 secs.
- Serve on a bed of rocket with basil dressing poured over the top.
