Poached Pear with Vanilla Ice-cream

Poached Pear

Ingredients

  • 4 firm but ripe pears
  • 2 cups of red wine
  • 1 orange
  • 1 tsp vanilla essence
  • 1 cinnamon stick
  • 1/2 cup sugar
  • 3 cups of water

Method

  1. Peel and core the pears.
  2. Peel two strips orange rind about 8 cm long.
  3. Put pears into a pot to fit snuggly. Pour in red wine, then add orange rind cinnamon and water.
  4. With a lid on the pot bring to the boil. Turn down to simmer for 15 mins with lid slightly ajar.
  5. Stir in sugar and vanilla and cook for a further 5 mins.
  6. Remove pears with slotted spoon and cool enough to slice into a fan.
  7. Reduce cooking liquor if required and spoon over top of pear fan.
  8. Serve with vanilla ice-cream.
