Poached Pear with Vanilla Ice-cream

Ingredients
- 4 firm but ripe pears
- 2 cups of red wine
- 1 orange
- 1 tsp vanilla essence
- 1 cinnamon stick
- 1/2 cup sugar
- 3 cups of water
Method
- Peel and core the pears.
- Peel two strips orange rind about 8 cm long.
- Put pears into a pot to fit snuggly. Pour in red wine, then add orange rind cinnamon and water.
- With a lid on the pot bring to the boil. Turn down to simmer for 15 mins with lid slightly ajar.
- Stir in sugar and vanilla and cook for a further 5 mins.
- Remove pears with slotted spoon and cool enough to slice into a fan.
- Reduce cooking liquor if required and spoon over top of pear fan.
- Serve with vanilla ice-cream.
