Upside-down Banana Cake

Ingredients
- 4oz butter
- 6oz castor sugar
- 2 eggs
- 3 very ripe bananas (mashed)
- 1 cup flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 tablespoons warm milk
h2 Ingredients for Topping
- 4oz butter
- 1/2 cup brown sugar
- 2 large bananas sliced
Method
- Preheat oven to 180c
- Line the bottom of a 9” cake tin with greaseproof paper.
- Cream the brown sugar and butter for the topping together and spread over the bottom of the tin.
- Cover with a layer of neatly placed sliced bananas.
- For the cake. Cream butter and sugar.
- Add eggs one at a time and beat well.
- Sift together flour and baking powder. Mix together.
- Mix baking soda into warm milk then add to mashed banana.
- Fold banana mixture in with other ingredients.
- Bake in warm oven for approximately 30 mins or until skewer comes out clean.
- Turn out of tin a.s.a.p but take care as glaze will be extemely hot!
