Upside down banana cake

Ingredients

  • 4oz butter
  • 6oz castor sugar
  • 2 eggs
  • 3 very ripe bananas (mashed)
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 tablespoons warm milk

h2 Ingredients for Topping

  • 4oz butter
  • 1/2 cup brown sugar
  • 2 large bananas sliced

Method

  1. Preheat oven to 180c
  2. Line the bottom of a 9” cake tin with greaseproof paper.
  3. Cream the brown sugar and butter for the topping together and spread over the bottom of the tin.
  4. Cover with a layer of neatly placed sliced bananas.
  5. For the cake. Cream butter and sugar.
  6. Add eggs one at a time and beat well.
  7. Sift together flour and baking powder. Mix together.
  8. Mix baking soda into warm milk then add to mashed banana.
  9. Fold banana mixture in with other ingredients.
  10. Bake in warm oven for approximately 30 mins or until skewer comes out clean.
  11. Turn out of tin a.s.a.p but take care as glaze will be extemely hot!
