Lemongrass & Chicken Curry

Lemon grass and chicken curryA delicious curry for summer. Lovely served with coconut rice. If you don’t like dark chicken meat you can use breast meat. I find that it becomes a little tough for my liking. That’s why I prefer thigh meat.
