Potato and Smoked Marlin Salad

Ingredients

  • 100mls olive oil
  • 1 clove crushed garlic
  • 50mls chardonnay vinegar
  • sea salt and freshly ground black pepper
  • 2 tbsp chopped mint
  • 1/4 cup chopped flat leaf parsley

For the salad

  • 1/4 cup sliced spring onion
  • 1/2 greeen pepper,diced
  • 1/2 red pepper, diced
  • 1 stalk celery, diced
  • 500g potatoes (e.g chats/kipler)
  • 250g smoked marlin

For the dressing

  • 50mls lemon juice
  • 100mls canola oil
  • lemon zest
  • 1 egg yolk
  • salt and pepper

To garnish, rocket leaves

Method

  1. Zest the lemon and reseve the juice.
  2. Make the dressing and chill in fridge.
  3. Mix together the first 7 ingredients.
  4. When potato is cooked slice and fold first 7 ingredients over them.
  5. Add spring onion, peppers, celery.
  6. Lay on plate and place warmed sliced marlin pieces on top.
  7. Garnish with rocket.
