Potato and Smoked Marlin Salad
Ingredients
- 100mls olive oil
- 1 clove crushed garlic
- 50mls chardonnay vinegar
- sea salt and freshly ground black pepper
- 2 tbsp chopped mint
- 1/4 cup chopped flat leaf parsley
For the salad
- 1/4 cup sliced spring onion
- 1/2 greeen pepper,diced
- 1/2 red pepper, diced
- 1 stalk celery, diced
- 500g potatoes (e.g chats/kipler)
- 250g smoked marlin
For the dressing
- 50mls lemon juice
- 100mls canola oil
- lemon zest
- 1 egg yolk
- salt and pepper
To garnish, rocket leaves
Method
- Zest the lemon and reseve the juice.
- Make the dressing and chill in fridge.
- Mix together the first 7 ingredients.
- When potato is cooked slice and fold first 7 ingredients over them.
- Add spring onion, peppers, celery.
- Lay on plate and place warmed sliced marlin pieces on top.
- Garnish with rocket.
