Spicy Sausage and Asparagus Pasta

Ingredients
- 3tbsp olive oil
- 8 chilli flavoured sausages (or Cumberland will do)
- 2 clove garlic, minced
- 1 onion, sliced
- 2tbsp tomato paste
- 2 × 400g tin of tomatoes
- 1tsp chilli powder
- 1tsp sugar
- 2tbsp chopped parsley
- 1 bunch of asparagus
- 300g of fusilli pasta (or other short pasta)
Method
- Put a large pot of water on for your pasta.
- Grill sausages until golden. Cool enough to slice and cut into 1cm thick pieces. In a pan fry lightly so end are golden and crispy.
- Make tomato sauce. Fry onions slowly in pan until soft, for about 5-8 mins.
- Add garlic, tomato paste and chilli powder and cook for a further for 2 mins.
- Now add the tomatoes, and sugar. Simmer slowly for 30-45mins. If it starts to get to thick add a little water or stock if you have available.
- Trim and slice the asparagus.
- Blanch the asparagus for 2-3mins till cooked al dente.
- Cook pasta to manufactures instructions.
- Add sausages and asparagus to sauce to heat through. Then add parsley.
- Mix through pasta and serve immediately.
- Serve with parmersan cheese and crusty bread.
