Stir-fry Sweet and Sour Pork

Sweet and Sour Pork

Ingredients

For the Sauce

  • 1tbsp rice wine vinegar
  • 1tbsp soft brown sugar
  • 2tsp tomato puree
  • 2tbsp light soy sauce
  • 1/2 cup of water

For the Stir-fry

  • 450gm pork fillet
  • 2tbsp cornflour
  • 3tbsp oil
  • 1 onion, roughly choppped
  • 1 clove of garlic, crushed
  • 1 green pepper, sliced
  • 200gm bamboo shoots
  • 1 large carrot sliced into battons

Method

  1. Mix together sauce ingredients.
  2. Thinly slice pork and coat with cornflour and fry lightly to brown all sides. Remove from pan.
  3. Add onions to pan and cook for 3 mins.
  4. Now add garlic, carrots, bamboo, pepper and sauce mixture. Bring to boil then turn down to simmer for 3 mins.
