Stir-fry Sweet and Sour Pork

Ingredients
For the Sauce
- 1tbsp rice wine vinegar
- 1tbsp soft brown sugar
- 2tsp tomato puree
- 2tbsp light soy sauce
- 1/2 cup of water
For the Stir-fry
- 450gm pork fillet
- 2tbsp cornflour
- 3tbsp oil
- 1 onion, roughly choppped
- 1 clove of garlic, crushed
- 1 green pepper, sliced
- 200gm bamboo shoots
- 1 large carrot sliced into battons
Method
- Mix together sauce ingredients.
- Thinly slice pork and coat with cornflour and fry lightly to brown all sides. Remove from pan.
- Add onions to pan and cook for 3 mins.
- Now add garlic, carrots, bamboo, pepper and sauce mixture. Bring to boil then turn down to simmer for 3 mins.
