Sweet Potato and Coriander Soup

Ingredients
- 1 tsp vegetable oil
- 2 medium leeks, sliced
- 2 medium sweet potato, preferably orange flesh
- 1 litre chicken stock
- 160mls semi skimmed milk
- 1/3 cup finely chopped fresh coriander
Method
- Heat oil in saucepan. Add the leek and garlic, cook until softened. # Add sweet potato and cook for a further 5 mins.
- Add stock and bring to boil. Turn down to simmer for around 20mins or until kumara has softened
- Blend soup in batches and return to cleaned pan. Simmer uncovered so that the soup thickens slightly.
- Stir in milk and chopped coriander. Heat to just below boiling point. # Serve garnished with coriander leaves.
