Sweet Potato and Coriander Soup

Chopped Coriander

Ingredients

  • 1 tsp vegetable oil
  • 2 medium leeks, sliced
  • 2 medium sweet potato, preferably orange flesh
  • 1 litre chicken stock
  • 160mls semi skimmed milk
  • 1/3 cup finely chopped fresh coriander

Method

  1. Heat oil in saucepan. Add the leek and garlic, cook until softened. # Add sweet potato and cook for a further 5 mins.
  2. Add stock and bring to boil. Turn down to simmer for around 20mins or until kumara has softened
  3. Blend soup in batches and return to cleaned pan. Simmer uncovered so that the soup thickens slightly.
  4. Stir in milk and chopped coriander. Heat to just below boiling point. # Serve garnished with coriander leaves.
