Tempura Vegetables

Ingredients

For the batter:

  • 1 egg
  • 90mls iced water
  • ¾ cup plain flour
  • ½ tsp baking powder

Assortment of vegetables:

  • slices of peppers, aubergine, courgettes, and onion

Method

  1. Stir all ingredients together without beating. Use batter immediately.
  2. Dip vegetables in batter and fry in vegetable oil until golden brown.
