Tempura Vegetables

Ingredients
For the batter:
- 1 egg
- 90mls iced water
- ¾ cup plain flour
- ½ tsp baking powder
Assortment of vegetables:
- slices of peppers, aubergine, courgettes, and onion
Method
- Stir all ingredients together without beating. Use batter immediately.
- Dip vegetables in batter and fry in vegetable oil until golden brown.
